These Zucchini Brownies are one of my favourite healthy treats. They are Gluten, Dairy & Refined Sugar free, so simple to make and of course they taste just as indulgent as classic brownies.
Ingredients
- 2 small, or 1 large zucchini, grated
- 3/4 cup almond butter
- 1/2 cup coconut sugar
- 1/4 cup cocao powder
- 1 cup of dark chocolate chips
- 2 eggs
- 1 tsp of vanilla essence
- a pinch of salt
Directions
pre-heat oven to 170° celcius
- Add your grated zucchini to a large bowl along with the coconut sugar, almond butter, 2 eggs and mix through.
- Next, add in the vanilla essence, cocao powder and salt.mix everything through and then add in the chocolate chips, saving about 1/4 to sprinkle on top.
- Pour batter into a brownie tin and pour the rest of the chocolate chips evenly over the top.bake for 25-30 minutes, allowing them to slightly cool before cutting them. Enjoy!
