Black Rice & Tempeh Nourish Bowl

Packed full of goodness, this black rice & tempeh nourish bowl is one of my favourites, especially in the cooler months. With marinated tempeh and a delicious Japanese creamy sesame dressing, it is full of flavour and and delicious texture.
Ingredients

200g plain tempeh

1 tbsp dark soy sauce

2 tbsp soy sauce

1 tbsp sesame oil
-
1.5 cups of uncooked black rice

1 cup frozen edamame beans (shelled)

1 avocado
-
2 cups shredded purple cabbage

1 bunch of broccolini
-
1 tbsp extra virgin olive oil

sesame seeds for garnish

¼ cup kewpie mayo
-
3 tbsp soy sauce
-
2 tbsp sesame oil
-
2 tsp sesame seeds
-
1 tsp honey
-
3 tbsp water
Japanese Sesame Dressing
Directions
Rinse the black rice and add 3 cups of water and the rice to a pot with 1 tsp of salt. Bring to a boil and then reduce heat to medium, cover with the lid and cook for 35 minutes or until rice is cooked through.
Slice tempeh into 1cm strips and marinate in the dark soy, soy and sesame oil for 10 minutes.
Prep the edamame beans by defrosting in the microwave and the halve your avocado and cut into thin slices.
Once the rice is about 5 minutes from being done, steam the broccoli ontop. You can do this by using stainless steel colander and lid.
Mix all dressing ingredients into a jar, then place the lid on and shake well so all ingredients are mixed through.
In a medium sized fry pan, add the olive oil and heat the pan on a medium heat.
Add the tempeh and pan fry for 2 minutes on each side.
Once the broccoli and rice are done, assemble your bowl by adding your brown rice, tempeh and all of your toppings. Pour over the dressing and top with sesame seeds. Enjoy!
