Passionfruit Shortbread

I love all kind of shortbread, but these are by far my favourite. I love to make them around holiday season as they are the perfect gift!
Ingredients
- 200 grams butter at room temperature
- 1 cup icing sugar
- 2 cups plain flour
- ¼ cup cornflour
- 1/2 tsp salt
- 1/4 cup passion fruit pulp & seeds
- 75g butter at room room temperature
- 1 cup icing sugar
- 2 tbsp passionfruit pulp & seeds
PASSIONFRUIT FILLING
Directions
Pre-heat oven to 155 - 160°C
- With an electic mixer, beat the butter & icing sugar until light and fluffy.
- Put the flour & corn flour through a sifter, add the salt and mix well.
- Roll the mixture out into little logs - 5cm long x 1 cm wide, and place on a baking tray.
- Place into the fridge for 15 minutes until mixture hardens slightly.
- Bake in the oven for 18-20 minutes - take out of the oven and let them cool before touching them (they will break if they are too hot)While the shortbread are cooling, make the filling by adding the butter, icing sugar and passionfruit and beat until combined.
- Fill a piping bag and fill one biscuit and place another biscuit on top, to make a sandwhich.
- Do this with the remaining biscuits and dust with icing sugar to serve.
