This is one of those salads that I could have every single week and not get sick of it. Pair it with some grilled chicken tenders and you have yourself a perfect, healthy lunch!
Ingredients
- 1 bunch parsley, finely chopped
- 1 cup freekeh (uncooked)
- 1 200g punnet cherry tomatoes, finely diced
- 1/2 large cucumber, finely diced
- 1/4 red onion, finely diced
- handful of fresh mint, finely chopped
- 1/3 cup olive oil
- juice of 1 lemon
- 1 fresh clove of garlic, minced
- 1 tsp salt
- 1 tsp pepper
DRESSING
Directions
Add 1 cup of freekeh, 3 cups of water and 1 tsp of salt to a pot.
- Bring to a boil and cook for around 35-40 minutes or until tender.
- While the freekeh is cooking, prep the rest of the ingredients and add all dressing ingredients to a small bowl.
- Add the freekeh into a large bowl along with the parsley, cucumber, tomatoes & red onion.
- Pour the dressing onto the salad and mix well. Enjoy!
