Chicken Fattoush

Fattoush, a Lebanese salad .. and one of my favourite salads! It’s so fresh and tangy, and the pita chips add a whole new level level of crunch! I’ve added chicken but of course you can leave it out making it vegan.
Ingredients
- 500 grams chicken tenderloins
- 2 cloves garlic, minced
- 2 cos lettuce hearts
- 1 200 gram punnet cherry tomatoes
- 1 cucumber, quartered
- 1/4 red onion, thinly sliced
- 2 cups pita chips (recipe below)
- 1/2 cup flat leaf parsley, roughly chopped
- 1/2 cup fresh mint, roughly chopped
- juice 1/2 lemon
- 1/4 cup olive oil
- 2 tsp sumac
- 2 tsp ground cumin
- 2 tsp grond coriander
- salt & pepper, to taste
- 2 pita bread
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp sumac
- salt & pepper, to taste
PITA CHIPS
Directions
Marinate the chicken tenderloins in the garlic, tbsp olive oil and a tsp each of the spices, salt & pepper.
- Pre-heat oven to 180° celsius, drizzle pita chips with the olive oil, spices and salt & pepper and place in an oven for 10 minutes, or until golden and crispy!
- Take them out and set aside to cool.
- Meanwhile, make dressing by adding the rest of the oilve oil, spices, lemon juice and salt & pepper.
- Heat some olive oil in a pan,and cook chicken for 3-4 minutes on each side, until cooked through and then place aside to rest.
- Once pitas have cooled, roughly tear them into bite sized chips.
- In a large salad bowl, add all salad ingredients, pita chips, chicken and stir through the dressing. Enjoy!!
