No need to order take out next time you're craving some delicious Italian food. This Pasta Alla Vodka is always a crowd pleaser and the best thing about it is how simple & quick it is!
Ingredients
- 2 tbsp extra virgin olive oil
- 1 500g packet of pasta - you can use whatever pasta you wish
- 1 small red onion
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp chilli flakes
- 3/4 cup tomato paste
- 1/4 cup vodka
- 3/4 cup heavy cream
- 3/4 cup parmesan cheese
- salt & pepper, to taste
- 2 tbsp butter
- basil leaves, for garnish
Directions
Heat the olive oil in a large pot and add in onion, garlic and a little bit of salt until the onion is translucent - about 5 minutes.
- Add in the tomato paste, italian seasoning and chilli flakes and stir through, cooking for a few minutes.
- While the sauce is cooking, bring a large pot of salted water to the boil and cook pasta per packet instructions.
- Add in the vodka into the sauce pot and stir well and cook for 2-3 minutes, until the vodka is slightly reduced.
- Turn the sauce heat down to low and stir in the cream, butter, parmesan cheese and salt & pepper to taste - then turn heat off.
- Once the pasta is cooked, strain and reserve a cup of pasta water.
- Add the pasta to the sauce pot and mix through with a little bit of the pasta water.
Recipe Note
Serve with basil leaves and a little extra parmesan cheese!
