Baby Led Weaning Blender Berry Mini Loaves

These Breakfast Mini Loaves are such a great staple for Baby Led Weaning and my little one is a big fan of these. You can easily mix it up by swapping out the berries for grated carrot, apple, or whatever you like or have to use up in your fridge. This recipe isn't very sweet as I like to steer away from sugar when it comes to my little one. But if you'd like them to be a little more sweet, adding coconut sugar is a better option!
Ingredients
- 1 banana
- 2 eggs
- 1/2 cup rolled oats
- 1/4 cup almond meal
- 1/2 cup mixed berries
- 1 tsp vanilla essense
- 1 tbsp coconut oil
- 2 tbsp Lakanto Monk Fruit Maple syrup (or coconut/regular sugar)
- 1/2 tsp baking powder
- 1/4 cup almond milk
Directions
pre-heat oven to 170° celcius
- Add all ingredidients except the mixed berries to a blender.
- Blend all ingredients, making sure not to blend for too long (a few seconds only)stir through the mixed berries and then add to a mini loaf tray, bake for 25 minutes, allowing them to slightly cool before removing them from the tin.
- Cut into strips long ways for your little one to pick up and eat. Enjoy!
