Chicken Soba Noodle Salad

This quick and easy recipe is one of my go to lunches or dinners. Poach the chicken in advance and whip up this salad in under 10 minutes!
Ingredients
- 2 chicken breast
- 1 270g packet of soba noodles
- 1/2 cucumber, julienned
- 1 carrot, julienned
- 1 small red capsicum, thinly sliced
- 1 cup purple caggabe, shredded
- 1/2 cup spring onions, thinly sliced
- 1/2 cup edamame beans
- 2 cloves garlic, whole
- 2 bay leaves,
- 5 peppercorns

1/2 cup soy sauce
- 1/4 cup dark soy sauce
- 1 tbsp minced ginger
- 2 garlic cloves, minced
- 2 tbsp rice wine vinegar
- 1/4 cup sesame oil
- 2 tbsp mirin seasoning
- 2 tbsp of water
Dressing
Directions
To cook the chicken, place chicken breast in a pot and cover with water, add in the garlic cloves, peppercorns and bay leaves.
- Once the water is boiling, turn it right down to a low simmer for around 5 minutes (don't let the water boil for too long as this can make the chicken tough).
- Once the chicken has been simmering 5 minutes, turn the heat off and leave the chicken in the water for around 20 minutes.
- Prep all of the salad ingredients and cook the soba noodles as per packet directions.
- Prep the dressing by mixing all of the ingredients in a small minxing bowl, and add noodles and salad ingredients to a large bowl.
- Shred the chicken and place into the bowl along with the dressing and mix well! Enjoy!
